Tasting notes. Quinta Nova de Nossa Senhora do Carmo Rosé reveals a beautiful pale, bright pink colour and intense aromas of slightly under-ripe raspberry and redcurrant, woven together with wild mint and sage. The palate is delicately structured and fine in texture — intense, fresh and transparent, with good complexity and distinct mineral notes. Balance is expertly achieved through the interplay of medium acidity, focused fresh fruit and fine concentration. The finish is very long and remarkably precise.

Food pairing. With its complexity and length, Quinta Nova de Nossa Senhora do Carmo Rosé pairs beautifully with grilled fish and seafood, poultry and white meats, risotto and lightly spiced dishes. It is equally rewarding as a fine aperitif. Serve chilled at 9–11 °C to show its aromatic detail and mineral freshness.
